Dry Storage opened in 2019 with a two-fold approach— acting as both café and milling operation grinding heirloom grains into flour for breads at the café, Basta, and eventually, local chefs. These heirloom grains—grains with an inherent sense of place and terroir, nutrition and use, and flavor — honor a shift to local Colorado grains as well as past methods of grain farming and varietals.

Serving coffee, breads, pastries, and tea sandwiches, and weekend barbecue pop-ups, Dry Storage offers greater access to the flavor and nutrition these grains can provide with direct-to-consumer sales, and supports and furthers the grain community as a whole through noble, sustainable practices. The beverage menu also includes low ABV options to support daytime drinking.
